Berry tiramisu
30 ladyfingers 1 1/4 cup heavy cream
1 cup cream cheese
1/3 cup sugar for syrup
I teaspoon vanilla extract
3/4 cup water
2/4 cup powdered sugar for cheese mix
1 cup raspberries
1 cup blue berries
2 cups quartered strawberries
Crushed biscuits for garnish
1. First, make a simple syrup combining the water and sugar in a medium sause pan on medium heat. Once sugar has dissolved turn of the heat and add in all of the berries. Stir the berries with the syrup to form a berry infused simple syrup.
2. Strain the berries with the syrup and set aside.
3. In a large bowl using a hand mixer beat the heavy cream, sugar, and vanilla extract until soft peaks form.
4. Add in the cream cheese and continue to whip until stiff peaks form.
5. Dip the ladyfingers in the berry infused simple syrup liquid and place in an pan to make the first layer. Don't let them soak as they will fall apart, just a quick dunk in the syrup is enough.
6. Layer the tiramisu with the ladyfingers at the bottom then the cheese mixture and then the berries until you pan is full
7. Crumble some of the crushed biscuits.
